Happy Fall, Everyone!
With the recent drop in temperatures (and the rather dreary weather today, in particular), it’s really started to feel like fall, and has put me in the mood for soup. Chili happened to be a featured recipe on the front page of AllRecipes.com today, so that really sealed the deal. Naomi used to make a pretty mean vegetarian chili, and she gave her stamp of approval to this recipe I found, with a couple suggested tweaks, so I’m excited! The chili (optionally topped with sour cream, cheese, and/or onion) will be served with corn bread and/or baguette as you desire.
I’m planning on tripling the recipe, just to be on the safe side (since 20 people are assigned ingredients, with potentially up to four more if any non-regulars show up), so we’re virtually guaranteed to have left-overs (potentially a hilarious amount of left-overs), so bring a tupperware-type container if you want to bring some chili home.

Ingredients:
- David & Mary: 3 tablespoons olive oil, 2 medium onions, 6 bay leaves, 1 tablespoon ground cumin, 1/4 cup + 2T dried oregano, 3 tablespoons salt, 6 jalapeño peppers, 9 cloves garlic, 3/4 cup chili powder, 3 tablespoons ground black pepper, cayenne pepper, Tabasco, 3 (28 ounce) cans whole peeled tomatoes
- Axelina: 3 (15 ounce) cans black beans, 1 green bell pepper
- Brad: 3 (15 ounce) cans whole kernel corn, 1 green bell pepper
- Chris: 3 (15 ounce) cans garbanzo beans, 1 (4 ounce) can chopped green chile peppers
- Dana: 1 (12 ounce) package vegetarian burger crumbles
- Erin: 3 (15 ounce) cans kidney beans, 1 (4 ounce) can chopped green chile peppers
- Jeff: 1 (12 ounce) package vegetarian burger crumbles
- Lauren: 1 (12 ounce) package vegetarian burger crumbles
- Leigh: 1 (12 ounce) package vegetarian burger crumbles
- Lindy: ~2 packs of vegetarian-friendly cornbread mix, 2 green bell peppers
- Matt: 1 (12 ounce) package vegetarian burger crumbles
- Natalie: 1 (12 ounce) package vegetarian burger crumbles
- Nick: 6 stalks celery, 2 green bell peppers
- Travis: 4 (4 ounce) cans chopped green chile peppers
- Whitney: 3 (28 ounce) cans whole peeled tomatoes
- Late Dave & Jera: 16-24oz sour cream, one baguette
- James: 3 (28 ounce) cans whole peeled tomatoes
- Trina: ~16oz pasteurized sharp cheddar (shredded or block)
- Winston, Travis2, Jessica, Brian, and anyone else: Fruit, salad, chips, dessert, or whatever else you want to add
